Vegan Superfood Kale Salad

Attention vegans, health enthusiasts, and lovers of delicious things! We’ve got a tasty dairy-free salad that’s more than just healthy - it’s super(food) healthy. This salad pairs our creamy Original Vegan Mayo with chickpeas, kale and other veggies- a pretty powerful superfood team!

Ingredients:

Dressing ingredients:

  • ½ cup O'dang Original Vegan Mayo
  • ½ tbsp dijon mustard
  • 1 tbsp nutritional yeast
  • 1 tsp capers
  • 1 garlic clove
  • 1 tbsp lemon juice
  • ⅓ - ½ cup water
  • Salt + pepper to taste

Salad ingredients:

  • 5 oz kale, chopped
  • 1 15oz can chickpeas, drained & rinsed
  • 1 cup sweet potato, diced (roasted)
  • 1 cucumber, sliced
  • 1 bell pepper finely sliced

Directions:

For the dressing:

  • Add all ingredients, except salt and pepper, into a food processor or blender and blend until smooth.
  • Taste and add salt and pepper to your preferences.

Assemble the salad:

  • Add kale into a large bowl. Top with sweet potatoes and dressing. Toss to combine.
  • Place in the fridge for at least 30 minutes to marinate or enjoy right away!
