Attention vegans, health enthusiasts, and lovers of delicious things! We’ve got a tasty dairy-free salad that’s more than just healthy - it’s super(food) healthy. This salad pairs our creamy Original Vegan Mayo with chickpeas, kale and other veggies- a pretty powerful superfood team!
Ingredients:
Dressing ingredients:
- ½ cup O'dang Original Vegan Mayo
- ½ tbsp dijon mustard
- 1 tbsp nutritional yeast
- 1 tsp capers
- 1 garlic clove
- 1 tbsp lemon juice
- ⅓ - ½ cup water
- Salt + pepper to taste
Salad ingredients:
- 5 oz kale, chopped
- 1 15oz can chickpeas, drained & rinsed
- 1 cup sweet potato, diced (roasted)
- 1 cucumber, sliced
- 1 bell pepper finely sliced
Directions:
For the dressing:
- Add all ingredients, except salt and pepper, into a food processor or blender and blend until smooth.
- Taste and add salt and pepper to your preferences.
Assemble the salad:
- Add kale into a large bowl. Top with sweet potatoes and dressing. Toss to combine.
- Place in the fridge for at least 30 minutes to marinate or enjoy right away!
